A rare archival tea that originated from the famous high mountain oolong Shan Lin Xi. The tea has been hand-picked and then stored in dry storage since 2008.
 
The teas are stored in ceramic containers and once a year it is "aerated", lightly roasted to remove any moisture and then stored again for aging. This process continues for many years.
 
The leaf is in the form of a classic bead, as is customary with Taiwanese oolongs, with leaf colours ranging from light brown to dark brown, see attached photos. The infusion is very clean, smooth and the refreshing taste of high oolong is still noticeable. The flavour is a combination of ripe berries, a hint of walnuts, sweet biscuits and a delicate, noble taste, so typical of an archival tea.

A very nicely balanced archival oolong from Shan Lin Xi.

Preparation of Gong-fu per 100ml - Gong fu Cha: - 6g, 95°C, 50-60s for the first infusion.
Second and third infusion 25-45s, then extend the interval by 20s each time compared to the previous one.
Lasts for many pours.
