Fujian Ancient Peony 2011

Delicately ripe white peony from the original cultivars growing in the Fujian area, harvested in 2011.

The original cultivars were previously used before switching to the Da Bai cultivar, which is currently used to produce Bai Mu Dan, or white peony. However, this older cultivar achieves a more complex flavour profile, with a fuller body.

The leaf is beautifully crafted, see photos. The aroma of the leaf is really distinctive, penetrating, reminiscent of the legendary Dark Rose 2015 oolong. Very penetrating aroma of fermented fruit, but very exotic - maybe lychee, mango.

This exotic flavour then writes itself perfectly into the infusion itself, and just slowly changes into subtle herbal flavours in the other infusions. Everything is beautifully balanced, delicate, but the taste of the tea is full, smooth. For me, the most interesting white I've had the pleasure of sipping.

Brewing 100ml - ideally 6g, 95°C, 40-60s first infusion, then 20-30s for subsequent infusions, add time once you want a more hearty flavour.

Will definitely last 5 or more infusions, depends on how much you pull flavour from the leaves and if you don't cheat the gravity :).
