Ishidera Kabuse Yamakai Premium 2024 - 50g
Kabuse from the Ishidera area of Wazuka, Kyoto, from a small family farm where the craft has been passed down for generations.
Harvested on 12/5/2024 from the Yamakai cultivar, at an altitude of 100m.
It was shaded for 18 days and the tea has a low roast (105C).
Kabuse with a rich umami sweetness and this time more fruity, as if with the taste of fresh figs :).
Vacuum packed, stored in the fridge.
Ideally prepared in shiboridashi:
First infusion - 60C, 4g, 70-100 ml, 1min.
Second infusion - same temperature 25-40s
Subsequent infusions, increase water temperature and extend the leaching time.
It should be noted that it is advisable to experiment with teas and discover their beauty!
