Fresh red tea from the Saeakari cultivar, from the Miyazaki region of Japan. Harvested on 16.6.2024.
Saeakari cultivar is new, registered only in 2011. It was created by crossing the Z1 and Saemidori varieties and has been bred to retain the bright colour of saemidori while being resistant to frost that can occur in colder regions.
Precision crafted foliage from a garden that operates in a purely natural way and is dedicated to producing specialty products that are always available in limited quantities. They also make their own fertilizer by fermenting grass and as they say, they are a bit "unique, fun and crazy"! And that's exactly what their teas are and that's exactly what I'm looking for :).
The leaf is handmade, meticulously crafted. A really very fine, delicate leaf, ranging in colour from light to dark brown, with a lower percentage of tips.
The aroma of dry leaf is a combination of fruit, nuts, cream.
The infusion is clear, bright and amber in colour. The palate is full, combining ripe fruit, cocoa, I'm still trying to decipher it further :).
Unique Japanese red tea is another pearl on the menu!

Brewing 150ml: 6g, 98C, first infusion 60s, second infusion 30s, third infusion again 60-70s, possibly longer if you don't want to continue with a weaker fourth infusion.
