Fresh red tea from the Takachiho cultivar, from the Miyazaki region of Japan. Harvested on 3.5.2024.
The Takachiho cultivar was selected from seedlings of the original tea tree at the Miyazaki Agricultural Research Institute and bears the cultivar number 11.
Originally intended for the production of Kamairicha. It has a thicker leaf that will allow it to retain its shape after roasting and rolling when making Kamairicha. The leaf of this cultivar is more elongated than that of the Yabukita cultivar and is slightly smaller. In addition, this cultivar is resistant to cold weather and disease.
I already consider the precisely processed foliage from this garden to be standard. A garden that operates in a purely natural way and is dedicated to producing specialities that are always available in limited quantities. They make their own fertilizer by fermenting the grass and as they say, they are a bit "unique, fun and crazy"! And that's exactly what their teas are and that's exactly what I'm looking for :).
The leaf is handmade, meticulously crafted. A really very fine, delicate leaf, ranging in colour from light to dark brown, with a lower percentage of tips. When you breathe through the dry leaf, you can smell a subtle combination of fruit and cream.
The infusion is clear, bright and amber in colour. The palate is both full and smooth, combining ripe fruit, a hint of citrus, sweet cream and a nuance of spice at the end.

Brewing : 150ml, 6g, 98C, first infusion 90-110s, second infusion 90-120s, third infusion leave as desired. It's a mild tea and I prefer to pull out the flavours, even so the infusion is without bitterness free.
