Harvest November 2023!

This is an excellent Gaba made from the TTES.12 Jin Xuan cultivar. This harvest is from November 2023, absolutely fresh drinking.

The tea is hand-picked in the MingJian area, Nantou county, at an altitude of around 400m above sea level.

The leaves are briefly dried indoors, then placed in vacuum chambers where they undergo the Gaba process, which is best described as "oxygen deprived oxidation :)". After many hours, the leaves are removed and the oxidation process is suspended, followed by drying.

The result is a leaf in colours ranging from bright green to brown and a very exotic aroma of dried leaf reminiscent of a combination of apples, yellow melon and cream. 

This is then reflected in the taste, which is a combination of fresh apples, yellow melon, sweet buttery cream (which comes from the Jin Xuan cultivar, which is often described as milky), a light and very fresh infusion, but never bitter.

Preparation per 100ml - Gong fu Cha - 4g, 90°C, 40-60s, depending on preference, then increase the time interval.
