Shincha from the Sayamakaori cultivar, harvested on May 4, 2006, in the Ishidera area of Wazuka, Kyoto. The tea was shaded for 7 days.
The Sayamakaori cultivar is named after the Sayama tea region, which encompasses Saitama Prefecture and a small part of northwestern Tokyo. This variety is cold-hardy and grows very well; it was developed from seeds of the Yabukita tea plant. The cultivar is therefore also suitable for northern regions of Japan.
One of the characteristic features of this variety is the scent of fresh flowers. To preserve this natural character and make it stand out even more, roasting was kept to a minimum.
The infusion has a pale green color, beautifully clear, with a pleasant, delicate aroma of mountain grasses, a fruity, floral note, and a subtle umami.
