Shincha Ishidera Yamakai 2024 - 50g
Shincha means new tea and this particular tea was harvested from the Yamakai cultivar on May 7, 2024, in the Ishidera area of Wazuka, Kyoto.
A beautifully crafted longer, glossy, dark green leaf rolled into thicker needles, see photos.
The aroma of dry leaf is reminiscent of lush, sweet grasses.
Delicate, fine spring harvest with medium umami intensity. Flavour vegetal in combination with asparagus and spring mountain grasses.
Excellent price/performance ratio. Vacuum packed, stored in the fridge.
Brewing ideally in shiboridashi.
Teapot brewing:
First infusion - 60-75C, 5-7g, 150 ml, 60-90s.
Second infusion - same temperature 20s
Subsequent infusions, increase water temperature and extend the leaching time.
It should be noted that it is advisable to experiment with teas and discover their beauty!
