A high mountain, lightly oxidized (15-30%) oolong from a beautiful part of central Taiwan. I discovered this garden while exploring Formosa this year, trying to find the best of the area.
 
Although I have been through many gardens, it was the garden from the most backwater part of Alishan that lived up to my expectations. A garden tended by the indigenous Taiwanese of the Tsou tribe, where tea is grown without the use of pesticides and where they approach tea processing in their own way, resulting in truly unique teas worth discovering.
 
This is the only fresh tea from this garden, otherwise they specialise in aged variants.
 
The aroma of the dry leaf is reminiscent of a combination of sweet cream, flowers.
In the infusion, you'll detect a mix of flavors of sweet cream, lightly roasted nuts, a hint of Asian nashi pear flavor. The flavour is very smooth, slightly sweet, refreshing and very delicate with a lingering aftertaste, with a pleasantly light roasted aftertaste.
 

Our current favourite among the lightly oxidised oolongs from Taiwan.

Tea cultivar: Chin Xin

Usage: Gong-fu or Cold-brew
Oxidation: 15-30%
Level of Roasting: light to medium roast
 

Preparation per 100ml - Gong fu Cha - 6g, 90-100°C, 50s for first infusion.
Second and third infusion 35-50s, then extend the interval by 20s each time compared to the previous one.
Lasts for many infusions.
