Ujitawara Gyokuro Mecha 2023 - 50g

Gyokuro Mecha from Ujitawara, Kyoto, from a small family farm where the craft has been passed down for generations. Harvested on 20/05/2023 from Okumidori, Yabukita cultivars at 250m altitude. The tea has been shaded for 20 days and has a medium roasting level (90C). It is essentially a tipsy, which cannot be used in the production of a traditional gyokuro, because tipsy is too hard and cannot be processed into the desired shape.
Aroma of dry leaf after freshly cut grass, slightly creamy, macadamia nuts.
The tea has a very pleasant, dominating, strong umami and flavour combining grass, the aforementioned nuts, seaweed in the first infusion. With subsequent infusions the umami gradually fades, the tea lasts for 3 infusions. Of course, the colour is typical for gyokuro. Vacuum packed, stored in the fridge.
Also great for cold brew.
Preparation ideally in shiboridashi:
First infusion - 70C, 5g, 100 ml, 40s.
Second infusion - same temperature 20-30s
Subsequent infusions, increase water temperature and extend the leaching time.
